Arugula, dandelion and cilantro mediterranean salad recipe

Ingredients (serves 4):

4 oz. arugula leaves: 0 calories
4 oz. young spinach leaves: 0 calories
4 oz. dandelion greens: 0 calories
1 oz. cilantro: 0 calories
1 oz. parsley: 0 calories
1 oz. young basil leaves: 0 calories
a few wine tomatoes (based on taste): 13 calories

soaked or freshly ground flax seeds or chia seeds (as much as you like, we recommend 1 tbs): 47 calories

Dressing:

1 garlic clove crushed: 0 calories
2 tbs. oli of choice (we prefer organic  cold press high lignan flax oil with algae DHA): 120 calories
2 tbs. balsamic vinegar or apple cider vinegar (or freshly squeezed lemon juice 2 tbs -we prefer lemon juice-): 0 calories
paprika: 0 calories
cayenne pepper: 0 calories

TOTAL caloric content: 160 calories, 5 weigth watchers points value

Caloric content per serving: 40 calories, 1 weight watchers points value

Preparation: Very simple, just mix all the ingredients with the dressing!

Flax oil is highly rich in omega-3's over 1200 mg per tbs! and these are GLA/ALA, and the addition of algae extracted DHA makes it the most packed with omega-3's vegan food. This is very good for kids, pregnant women and people with neuro-degenerative disorders, ADHD, autism! also it is great for asthma!

This salad is packed with nutriments, very healthy for older kids, for younger kids you can do a smoothie without the oil and cilantro (as cilantro is very potent as flavor, usually kids don't like it, we replace it successfully with parsley) and to make it creamy 1/2 avocado and 1 banana can be used (this will add about 200 calories, 50 calories per serving, 1 weight watchers points per serving). Calcium, iron, various minerals, vitamins (especially vitamin K and C) and vegan protein will nourish the children.
